As to the problem you meet, do you have re-flashed the eMMMC and SD card at the same time?
What do you mean?

If the emmc use an old version OS image, and the SD card use a new version OS image, Or the emmc use a new version OS image, and the SD card use an old version OS image, also it may have some problem.
So please make sure both the OS image in SD card and emmc are the new version.

And another is make sure the HDMI is already plug into the board, and then power up.

On eMMC is Ubuntu Mate
On SD card is LeMedia

The versions of both them are V1601 ?

Just out of curiosity, do you know why the LeMaker Team does mention:

SHA1 :

CRC32 :

on each download site ?

You could use the check sum to verify the download.https://en.m.wikipedia.org/wiki/Checksum

So, You must also update the Ubuntu Mate to v1601

So, You must also update the Ubuntu Mate to v1601

This is what I did
I was on Ubuntu mate v1511 and I downloaded the v1601 LeMedia and i got the messed up screen
On 20 jan v1601 of ubuntu mate was released so i upgraded the  eMMC and re-download LeMedia as i have deleted the old download and it works.
